I usually let the salt sit on the picanha over night then I would put in the oven for a certain amount of time then I would cook it on the cast iron pan and base it with wagu fat or unsalted butter.

Ramen in dashi broth (fermented skipjack tuna flakes, chili flakes, kombu) with roast pork, braised greens, pickled sprouts, fermented okra, okra flower, scallions, water spinach, a soft boiled egg, konjac yam noodles and seasoned butter
So healthy and comforting but you need to enjoy all the work it takes lol. The okra was fermented a few months that I used. The sprouts were pickled quick in red wine vinegar and the broth does not take very long at all, but there is some technique involved. Okra flowers are pretty and edible. It was a five minute egg and it was pork shoulder I used.

Some food projects we are doing. There are several pepper mashes fermenting that will become hot sauces, also some naturally dermenting pickles and we are working on a malt vinegar made with a beer that has a little over 8% alcohol, which is the sweet spot for vinegar. Using an aquarium air bubbler and a hose, we will pump air into this alcohol which has acetic acid bacteria added to it. The bacteria needs air to do its job, so forcing air into ferment will get us vinegar in weeks instead of many months.
That large vessel has rice and crumbked Chinese yeast balls which will create a yellow rice wine

We aged meat in days thanks to Aspergillus Sojae mokd and it's enzymes.
My father and I incubated A. sojae on a cured pork belly for 48 hours at 85 percent humidity and 88 degrees. The curing and mokd keep it perfectly safe. The tekos and humidity are needed for the A. sojae to do it's thing. We rubbed it with peanut oil and smoked it over indirect heat with coal and cherry wood chips. The belly was basted with a miso glaze made with our white miso, garlic, sesame oil, sugar, chili flakes, ginger, black vinegar, sherry, and ketchup
The meat was super smoky and you can see the nice smoke ring. It developed that smoke ring and a 200 degree temp in just 2 hours over indirect heat. The meat had a nutty, aged almost gamey taste in a great way that paired perfect with the smoke and glaze.
