Everytime you source a vehicle to steal it will be either low end, mid range or high end. If you fill the warehouse with 10 low and 10 mid then it will be a high end eveytime

If you fill the warehouse with 12 high end also you can then choose a specific car to sell and each time you source you will get that specific car back
