SO so far, I own an MC club and securo to steal cars etc etc and do my daily bunker, MC businesses, nightclub.

I've even done a few heists like cayo, casino and prison break from this server lfg which is great.

What exactly are the other things to do? My friend invited me to a random like community map, some racing, in my mobile operations truck theres some bs about some like random missions? Whats all this stuff about police work this week? Is there like random missions to do in this game? What exactly are these things?

You should have time for 5-6 tries.
