You can only get manual transmissions doing the drag race glitch into free roam or using a client modification (console or pc wise) to make it so your car cannot go beyond a certain gear without you clicking a keybind, works both up and down

The weapons don’t really do much for Nightclub vehicles but with Ghost Org you should be able to do roughly half your sale by the time the timer is up
