More of a culture question than a language question, for our natives here. Mods, feel free to delete if this is a bad spot for it.

I'm writing my German CV for entry-level software positions. I have about 2 years of experience at a German company. Here are my questions:

-At my USA university, I had paid internships with a chemistry lab (no software) and a bioinformatics lab (some software). I have acceptance letters and salary records, but no Arbeitszeugnis-style document. Should I include these? Do they fit under 'education' or 'employment'?

-I have more education than work experience. Should I list education before my work experience, or after?

-There are two covid-related gaps in my employment history I want to explain in my CV (10 and 4 months). What's a good way to do this?
