#why i can speak german one day really good and the other day i get stuck? how is that possible?

@silver stream Eh, it's not too uncommon for people who haven't become proficient in a language yet. It's something I've experienced myself, especially for languages I don't use all that often. Just keep practicing until you'll be able to speak the language well enough even on your off days.
My dream is to speak german fluent as my own native lanuage dutch
And understand what most germans understand
start thinking in your mind in german
Not to be discouraging but you'll probably never get to that point, large majority of people don't. Just set realistic expectations for yourself and learn/practice every day
My dream has always been to speak English as fluently as my native language. It took me a lot of effort, but I'm pretty sure I've managed to reach that goal by now. However, it's not necessarily a realistic goal for most people. It took me several years of almost complete immersion to reach this point. If you start learning a language as an adult, not even complete immersion for years or even decades might be enough to make you sound like a native.
Instead of setting yourself such lofty goals, I'd recommend just taking things one step at a time. Otherwise, you might just get frustrated with your supposedly "slow" progress, even though you may actually be making very good progress overall.

I mean there are also words in dutch that i dont even know and im a native dutch speaker
