How do I know which endings go where on participles such as 'e', 'en', 'es', or 'er'? They seem rather random to me. Is there a rule for them or a handy chart to help memorize? Any help is wanted.

Should Schlafend end with an 'er' or an 'e' or 'en'.

It's exactly the same as an adjective so you can just learn adjective endings.
