I am extremely confused right now–
According to most charts referring to possessive pronoun endings, the nominativ masculine ending for "dein" is "deiner." But why do we say "Dein Deutsch ist sehr gut." and not "Deiner Deutsch ist sehr gut."? Isn't Deutsch masculine and isn't "Dein Deutsch" nominative?

You may be confusing two different charts, namely possessive pronouns when used like an article (attached to a noun) and possessive pronouns when standing on their own.
If you said, "Das ist deiner."
Then it has the -er ending
But when used like an article, it's just "dein", "Das ist dein Mann"
