In very broad strokes, a lot of things that are technical, specifically/custom designed for its use fall under the category of engineering. Since this encompasses a very large field, it is subdivided into categories with their own courses and/or modules. Some of the more well-known subfields are "Bauingenieurwesen" (building engineering) and "Maschinenbauingenieurwesen" (machine engineering), but there are other courses as well. If you study computer science, it's very likely you'll have to do a module on "Software engineering".
Also, some universities take one field, switch out a few modules to better suit their profile, and name it accordingly. Some 10 years ago, I read in a newspaper that there were about 3000 different courses/degrees to study in German universities - this might be one reason why.
Regarding ranking, you should look into that after you found out which engineering branch you want to pursue. Generally speaking, RWTH Aachen, TU Berlin and TU München seem to have good reputations/rankings. On the other hand, while ranking seems to reflect progress in research/development and overall prestige, this does not mean necessarily that the way courses are taught and topics are selected is best-suited for you. And if money is an issue for you, you might want to look at the rents, which tend to be more affordable near smaller universities.

As I said, there are a lot of fields/courses related to engineering, not all of them have names with "engineering" in it. I don't know them all. I'm not sure on this one as well.
Usually, there are "Modulhandbücher" (singular "Modulhandbuch"), or sometimes "Prüfungsordnungen" (singular: "Prüfungsordnung") where some or all of the modules until graduation are listed. You might be able to infer something from the names of the modules. In "Modulhandbüchern", the modules are usually explained in broad strokes, too, in what contents there are and what literature is used. Or you might be able to find a "Studien(verlaufs)plan" (plural: "Studien(verlaufs)pläne"), which is usually more easily understandable.
I know a university of applied sciences in my general area which teaches biology related engineering courses because it advertised at my school once. I linked the types of resources listed above for their Bio-Engineering course so you get a rough grasp on how they look like and what's in them. They have more courses related to biology and engineering, like Biomaterials Science. But since I haven't studied there, I don't recommend to or discourage from studying there.

Please check the German engineering ranking universities in Google. It will provide you a list. TUM in Munich is one of the top engineering schools too. I think Berlin has a few too. Hope this helps!
