Starting with C flat is quite annoying for beginners

@viscid star music can be written in any key. The one in F (the one you sent before) is just as correct as the one in G (the one you're talking about now). You can play it in any key. Eb you'll start on a Bb, C# you'll start on a G# etc. Theyre all correct. People change the keys signature and transpose for many reasons. Often, for beginners, the pieces are transposed to a key with fewer sharps or flats to make it easier to read. Other reasons are like trying to make a piece that starts on the B below C into a flute piece but most flutes can't play that low so transposing it up so that flute players can play (idk if this is making sense) also transposing between instruments luke some trumpets are in Bb whereas flutes pianos violins are in concert B. Although I've also seen people transposing just for fun or like a party trick so there's that too.
