Apollo class has been used for a couple of ship. Like the one from unification, them vulcan things maybe, or possibly something not seen.
And I think there is a LCARS with a apollo class star ship on.

idk if you take requests but I would love to see a USS Christopher Pike, since from that one Collab between snw and lower decks, pike actually has his own holiday in the federation in the future so it would make some sense to be a ship named after him
