Start with AC 2, if you really care about good graphics then AC 4 Black Flag or AC Unity.

AC1 if you don't want to miss a detail from the story
AC2 if you can't get AC1. Note: Every AC up to AC3 has a "Previously on Intro".
ACBF if you want a less lore dense introduction to the franchise, but a quite entertaining game to play.
ACO if you just want to caught with the RPG saga.
