There's nothing you can do if you miss a day or two. The system is in place to reward you some extras if you miss login for a day or two. It's not supposed to be 'risk free', devs still want players to play daily, but value your time if you do not.

there's different types of dailies and weeklies content, generally everything can be cleared in a few days, then you wait for next reset/maint.

you can get your daily chores done in between 1-2 hours depending how good your are setup etc. Weekly stuff really depends if you a progressing hard content or not. Just doing the basics will probably add another hour or two on the weekend. Progressing hard content can consume quite some extra time.

Alts will help you to progress faster and just have more of everything. More mats and gold for your main to reach higher ilvl faster and even go beyond the ilvl you need to progress, more left overs to get your alts higher if you also want to play them in high end content etc.

you should have as many alts as you are enjoying. You also dont have to play all your characters every day - there is a rested mechanic that gives you extra loot if you miss a day. It's not 100% extra but at least its something
