Okay so the way I did it, I searched for it in the quest menu and then just back tracked through the prerequisit quests until I found where I was at and could start/continue the quest chain.

The basic flow of it is. Youre doing all the guardians in order. You have to visit the guardian areas in the overworld map, do a short quest, then kill the guardian. Then travel to the next guardian arena
