Yes, every class is viable. There is no tanking in this game as there is in other MMORPGs like WoW or FFXIV. Really it just comes down to the player using the class, however there is gatekeeping here just like in other places for any variety of reasons.

Yeah but there are no aggro or threat mechanics. You're not directing the bosses attention as you would in WoW, you're just tanky as in don't die.

The pvp islands have never had enough people for the event to start. World bosses have no one, probably because everyone is doing higher level bosses

No, you would do them its just you might end up doing that later or you just need to do them more around peak times (9 PM EST is usually around peak on NAE)

If u have a stack, you can open item menu and you have use bundle

To get bundle use auto sort it'll stack books
