Code being moved around for no reason

When attempting to write this code (specifically from the 8 movement direction on 2d on the docs) it keeps glitcjing and adding the > stuff before stuff and sometimes duplicating and I can't stop it as it just keeps happening.this had happened previously before too for some other codes I tried to write so I doubt it's special to this one only

Those are tabs used for indentation. You can check if disabling Auto Indent setting under Editor -> General -> Text Editor -> Behaviour helps, also options under Editor -> General -> Text Editor -> Completion may be of help. Since you seem to be on a mobile device, I wouldn't exclude the possibility that its built-in auto-completion is messing with it as well

tried to disable auto indent and everything in the completion section but still nothing

sometimes I just tap on the code and it does the thing after a bit of a delay

and copy pasting the whole code does it too automatically within a moment
