The horse kick does not rebind. It remains on the R and F buttons.
They are separate binds which can only be manually edited via the input.ini file.

%user%/AppData/Local/Chivalry 2/Saved/Config/WindowsNoEditor/ in the run prompt should take you directly to the relevant folder

%localappdata% to just get to the AppData/Local folder
