I can use all the other RiiConnect apps just fine, as well as online play in Brawl, but Mario Kart Wii specifically instantly gives an error 51420.

If its wiiflow all you should need to do is change the private server of the game specific settings to wiimmfi, right?

The other alternative you can do is use the RiiConnect24/Wiimmfi Patcher to patch the wbfs file

But changing the private server might be a better/easier method

Right before launching the game, go to the settings indicator right by the red X and Star and go to the last page, then change the privete server to wiimmfi

they fixed it by buying a legitimate disc and using the disc channel, so it's probably a cios problem
