I've been losing much more health and been doing barely any dmg to normal enemies

Struggling on kotfe enemies The normal ones can get me to around 50% hp for some reason

That's on the low end of the spectrum for that area of the game. Also make sure you're playing on story mode versus veteran or master.

Just wear whatever you've been given or found from loot/rewards. (ETA Do FPs, those always gear you up). It's not until level 80 that you should make good effort on gearing. At the very least, the Supplies vendors sell level 75 mods I think.
