Aside from from some audio issues in the earlier parts of my videos (Lets plays and playthroughs)
I don't understand why my videos aren't appealing?
I have alright thumbnails, I use the tags, the titles are to the point, could someone take a look and point me in the right direction?

In my opinion, the main thing that is not getting you the views that you would prefer to have is just the overall idea of the videos. Like I don't think any person would sit and watch your entire video because eventually they'll just get bored and click off to another youtube video.
So this is what you should do. Make like an idea for your videos such as doing a challenge like "I spent 12 hours trying to get this rare pokemon" or something else. You shouldn't feel ashamed if you can't think of an idea for your videos since even for me, it takes a long time for me to have a good idea. The thing that matters on youtube is for the audience to enjoy your videos and this would be shown through them watching throughout your entire video and sometimes them commenting that it was a great video.
For thumbnail and title, I would recommend to use https://thumbsup.tv/ or another good alternative since what you can do is preview your thumbnails and titles onto what the viewer would actually see when they look at your video on the homepage or the sidebar. This will help determine things that you would personally would want to change and improve on before actually posting the video.
For editing of the video, you should really try to see what your favourite youtubers are doing that makes you want to watch their entire video and take inspiration from that. What I mean by that is that if they put text for example, it would make you more engaged since your mind is automatically reading that text with no consideration. Another example would be using images and sound effects to explain things.
You should really look into what music you would want to put in your videos. For this you can actually use nintendo's music just by searching that up and using https://greenconvert.net/en6/youtube-to-mp3 to download the music of your choice and add it into ur editing software.
You can still keep doing your let's play videos but you should really try avoiding doing it like that so you should reshape it and just overall make it more interesting for the viewer so if you make a video, you should get other people like friends to go over and ask them for feedback so you can keep improving.

I wouldn't use nintendo music as you could get copyright strikes, I use Youtube audio library to find decent music

Nintendo only goes after problematic content it seems, good example of this is modded content or emulation related content
So it's a few things:

It's very difficult to start a Let's Plays channel nowadays. For people who do still watch that content, they are sticking with the big youtubers and streamers who are already well known for it. Only they could get away with uploading an unedit VOD and get a lot of views. But even they know they need to be edited to make something more interesting if they want to generate even more views

Since it's an unedited or mostly unedited VOD from a stream there are awkward moments of quietness or even you having a conversation with someone who is there live, which can be confusing to someone watching the YT video. You're serving two audiences that are looking for a different sort of entertainment.

Simple to the point titles are not always a good thing - it doesn't have a hook that makes it stand out from any others. and there's infinite amounts of pokemon nuzlocke playthroughs. your video is going to be buried in a sea of videos with the same title and format
