I feel like if this was the type of niche I was into, then yeah it keeps me engaged!
I don't think it's overedited at all, everything you put in added to the video super nicely imo. In summary, I was engaged yes
Yeah that looks really good. I think the time spent on black screens should be cut out, though I think thats just temporary for this post.
The shots we're you're just pushing in on the interviewee and occasionally zooming could use something else to spice them up, even just a graphic or change in the zooming. The one shot were someone walked through the background while the interviewee was talking was a good example
Overall that is really good though. That seems like it would keep really high engagement.

By graphic I mean an icon or drawing or graph or something like that just to briefly pop up and have something new appear

I don't think it's overedited, I think it's actually a level of edit I want for a subject I don't know anything about ๐
Overediting would have a lot of flashy effects, subtitles everywhere, sound effects every 2 seconds, anything that would detract from the message instead of enhancing it.
You don't have that problem, it has a nice style+pacing and you should keep doing it without doubting it ๐
If you can keep this editing in the first 30 second / 1 minute of the video to keep the retention high, you can probably lower the quality level a little bit after the first minute if you're late in your schedule / feeling burnt out or if it's asking too much effort (been there...).
If you can maintain that quality for more than 5 minutes though then maintain it, then do.
Though I'm saying that without being sure there's a longer video ahah

Now when choosing the font, pick a font that'll also look readable when you use it in your thumbnails. Then it will all match together, you'll slowly create your own style. So eventually you'll use this font in your video's, thumbnails, youtube banner
