"Thirst" is a Potion Effect similar to "Hunger", Thirst makes you consume water faster.
it doesn't prevent you from ever actually getting thirsty.

The Heart thing, It looks like the Ender Crown might not have had a modifier on it prior to you equipping it.
Some Modifiers aren't initialized on a Bauble until it's equipped, this causes a slight desync, if you unequip the Crown, and Re-Equip it, it should fix itself.
But that's a known issue with Qualities.
