Its a minecraft glitch. When falling from certain heights and with certain circumstances you can blip out of the water consistently meaning that when hitting the very edge of the water you will exit out of the water immediately without taking any fall damage

Its called a "double jump" or at least thats what I call it

When landing on the edge of any block (doesnt matter which) the game somehow lets you land around two blocks above where you were going to land. If you dont press anything it just kills your momentum and then you keep falling. If you touch the ground after that happens, you die immediately but if you go into a portal before, you dont receive any fall damage

This is possible on a number of other maps because theres basically no requirements or setup needed since you "just" need to land on the very edge of any block

That being said its still difficult and also probably not intended since the anticheat is known to kick you for doing it (sometimes)
