I always play with a bow so I usually kill the goblins long before they get to me, but I started practicing swords and I can't figure out how I keep getting killed.
Sometimes I can be right on top of a goblin for several seconds and survive, but sometimes I can get instantly killed if a goblin is in a 2 meter radius from me, not even touching. How does this work?

The swords hit box is the little white trail so you would want to hit with that part
You just want to hit the goblin when the sword is about to hit you

I know how to kill them but I want to know how they kill me super easily sometimes, but sometimes they don't, and I can't tell what I do differently when I die.

How they hit you is from their sword, I know it sounds obvious but yeah, it's the reason they sway their sword side to side whenever they're moving, it's the only way they hit you.
I best recommend flanking behind then attacking to avoid their sword, but you can always try your own method.
