I would say work on judging it based on parallel movement, even when it does work properly.
You can use the “15 slower,” part of the command wheel(whatever it is actually called) to lightly adjust speed.
If you go through the trouble with identifying ships, you can also see their maximum speed and take a guess based on current conditions.
Those are way too many exceptions, i think you just got lucky

You can do salvo shots which fire off two or three torpedos spread depending on the range and speed you tell the TDC.
So that ideally you can hit the ship more than once, but also that you can account for any errors and at least hit once.

The parallel movement means that you set up the U-boat directly parallel to the ship you are attacking and try to match your speed to its speed through minor knot adjustments.

It was a remarkably hard feat to land torpedo hits.
Things can change on a dime, the convoy could alter their pattern and throw everything you did out the window.

Salvo shots are multi-torpedo shots that the TDC calculates a spread for based on ship length and I believe range and speed.
Ideally it would lead to multi torpedo hits to ensure a sunk ship, but it doubles as a measure to account for errors and changing situations I would argue.
The middle dial on the right lets you choose salvo, then you set what kind from the bottom dial.

there's a lot of debates that go along the lines of "we need more electric vehicles because gas-powered vehicles pollute the hell out of everything" against "thats not a good idea because they need more energy to produce and charge than a regular automobile." both of these are perfectly valid points but they still ignore the fact that both of these are bandaids, one of which is a bandaid to the longer term impact of our current infrastructure and the other a valid concern of how changes could get in the way of the fact that this infrastructure, however imperfect, still needs to service people.
we can take a look at say, the netherlands, and see that the actual solution is to have less fucking cars, less car infrastructure so long as its actually maintained, and to organize a community/society/government around prioritizing literally any other form of transportation other than cars, which by the way actually works in favor of drivers rather than against them. thats the kind of places that these debates should go towards, as in seeing how infrastructure as a whole can be reimagined rather than "fixed"
