As nice as greater storage bandwith is, a normal SSD and higher tier GPU is still better for a gaming and most work task problems then stepping back on the GPU for a NVMe
However they're also not that much more expensive that you shouldn't be able to do both.

It's not just some more bandwidth
It's enough to reduce load times of projects from like 5 minutes into 1 minute

As the GPU does impact more then just the gaming work, it's also not the greatest choice for editing.

Save up a month more or something.
The price differences are also really not that high from SATA to NVMe

Just get an NVMe SSD with not a botched controller.

Upgrading your SATA SSD to a NVMe SSD later on is also much cheaper task then getting a new GPU

And that'll leave you with a secondary SSD you will likely keep and can use as a additional offload drive

While if you downstep your GPU you'd have to invest a lot more for a new one, and can't really reuse the old one.
