It's a lot.
For starters, Easy Anti-Cheat (the anti-cheat solution they chose) reportedly has kernel access, meaning it can do just about anything. Some people have gone as far as to classify it malware because of this.
It also makes it harder if not impossible to install mods, which may sound good at first considering they're against the ToS, but a lot of these mods are important for accessibility. A good example is VRC-CC, which enables captions in movie worlds.

Basically punishes the most dedicated part of the playerbase, poorer players, and those with disabilites more than it solves the crashing problem, which they claimed it would. Also, anti-cheat in a social is inherently anti-freedom, and makes VRChat more of corporate run dystopia, so a lot of the panic is political and personal value based too.

So the main thing from what i heard are the mods that actually make the game run smoother are being taken out. While most complains i have heard in game are about the mirror mod, a lot of people have been talking about sound fade, anti-crash, avatar hider, and other mods to help prevent lag and crash being taken away.
From someone in the 18+ club communities it is affecting dancers' abilities to perform and entertain.

it is not malware stop spreading misinformation. hundreds of games use similar anti-cheat software and have so for decades. No one is entitled to CC for pirated movies but they are actively prioritizing accessibility updates.
They targeted malicious clients due to thousands and thousands of trust & safety reports of people being harassed/stalked/hacked and the anti-cheat detects a modified client and does not discriminate against which files are mismatched
