There shouldn't be any limitations. Just turn it on and test it out. It should work fine as long as your monitor supports FreeSync/Adaptive Sync (GSync)
Why does borderless fullscreen work as fullscreen though? Is that nvidia or windows?
It's the game's settings. The GSync works in a way to reduce input latency and makes it work as if it was being played in fullscreen, so it will cap your FPS to match it if you have VSync turned on in game.
If a game does not support exclusive fullscreen, then this will work just fine
