I've had that off since forever.
Even my GPU gets hot because I play on max graphics cause of the automatically optimize that nvidia has.

This usually indicates that something else is doing the editing; see if, after using DDU and reinstalling drivers only (do not install GFE nor NVIDIA App), your settings still get changed.

For troubleshooting this issue, DO NOT install GFE. DO NOT install NVIDIA App. Just install the driver with no GFE, go to the game, change settings, save, exit, and then later come back to it and see if they get changed.

Close that window and then select GPU. If it autoselects a different brand, change it to NVIDIA. Then Clean and Restart

Choose the option without GeForce Experience here, but even if you did, it shouldn't be activated without logging in.

I'd probably clean install Windows and check again with only the drivers and the game installed at this point
