Some of the main advantages of medium tanks (and heavies but that's another story) is the ability to get either the turrets or heavy machine guns. The soft attack you get from these two is usually better than the defense (who cares about that?) and breakthrough that the other options provide
If you want speed tbh just get trucks. Like if you're early into the war, make tank divisions to breakthrough the line and mech/mot to encircle divisions

From experience an 8 tanks/ 8 motorised or mechanized is optimal, you might replace a mech or two with tanks once you finish your doctrine
for support companies you might wanna replace mot recon with AA, and engineering with the supply support company

Mech is not needed in any point of the game against ai, ai divisions are ABISSMAL. 7/2 is shit yes, 12 w is even worse yes. 16/18w pure inf with support arty, logi and engi is fine and enough for ai as holder division, if ur doing a pure inf build u should go for 36w inf
