Do you mean the live version from On The Night?
If yes: That would be neck and middle single coils on your Strat. Knopfler used a Soldano SLO 100 for that tour, but you should get close with a Fender-like clean amp model. I'd suggest the following settings: Bass at around 1 o' clock, mids at noon to maybe 2 o'clock, treble to taste. Gain-wise I would say: turn it up until you get a very, very subtle crunch, barely audible. Delay time at around 410 ms, reverb to taste.
Oh and play with your fingers and drop the pick!

For Dire Straits' OES tour it's quite simple, there's a chart for all of Mark's settings available:

His sound is mostly delay and reverb, so you should dial in some 1/8 or 1/4 delay times according to the BPM, the same goes for reverb.
As for amp settings: There's no easy way around it, just fiddle around with the knobs and listen to what it does. It takes some time to learn and master it but you will eventually get there the longer you play and listen(!).
