Would be good to know which epiphone you mean, but if youre a beginner it might honestly not be a bad idea to just buy what you feel looks the best.
If you can, definitely try both and see how they feel in your lap and if they feel comfortable.
Maybe google something like „single coil demo“ and see if you like that kind of „glassy“ tone, because thats something you wont get out of a les Paul

I had a pacifica personally, they're great guitars (yes, including the 012 and 112) and I think any beginner could do very well with them.

clip tuners are faster, track better, more accurate, etc

100,000% Yamaha Pacifica, and here’s why: the epiphone will have bad quality control, and at this price, you need good quality control or the guitar can be crap. The Yamaha is famous for its good QC, and good reputation overall

Idk about epiphone having bad QC. That's more of a HB thing. If it's inspired by Gibson it's gonna be pretty solid.

I've had 2 les pauls and my brother has an SG I've tried and they've all had zero issues
epi les pauls are kind of infamous (and have been for probably two decades at this point) for being absolute garbage for the price, having awful qc and generally sounding like fuzzy messes
classic and modern les pauls, and my brother has an SG standard
I tried a couple last week and my assessment didn't change
idk if we've been playing the same guitars
Gibsons are fine, the QC issues in their case is mostly just finish stuff
just a hazard of using nitro really
mid/high end epiphone to me has always felt like a $200 guitar cosplaying as a gibson

the nice thing with katanas is that it feels like literally everyone has them (because they do)
so they come up on the used market constantly, even at retail stores
last time i visited guitar center they had a bunch of used ones available
as an added bonus, since they're so popular it's easy to find people who had had whatever question/problem you wind up with

Don’t get the katana mini, if you want a mini amp, get a used spark mini. If you can find it, a used Spark 40 or boss katana (I prefer the spark) is really really good
But the mustang lt25 is good as well
hard-shell cases not necessary unless ur traveling with it

but on average you'd end up with a guitar with no glaring issues
Yamaha is good but you have more choices from Squier
yamaha might do their frets a little better, cut the nut a little nicer
I like the look of a squier affinity but prefer the sound on a yamaha pacifica

Yamaha is Yamaha tbh, you’re not going to beat it without spending significantly more
The most realistic part of the show was replacing a $3000 Gibson with a $600 Yamaha 
if it goes well (the HB) , you have a great guitar, but the pacifica will guaranteed be good
i would get the HB, because its what you specifically want
it wont be much hassle to just ask a guitar store person if there is anythign glaringly wrong

If you’re handy you can probably manage it yourself, but there’s a bit of a learning curve
Adjusting string height (action), neck curvature (relief) and cleaning up the fret ends (they can start to sprout out of the wood if humidity changes)
1 and 2 you can, 3 probably won’t be an issue
i'll go to a store with it if i can
