Technically, there are two steps.

1. All the conversion on skill gems happens simultaneously.
2. All the conversion on the rest of places happens simultaneously.

Check the ingame tooltip for damage conversion.

Updated the example. Assume you starts with
50 cold damage and 100 lightning damage, after the conversion, you will end with 50 lightning damage and 100 cold damage. There’s no recursion.

Yeah some are just much more rare. You will usually get the amphora relic unique that gives you a barya for no defenses.

I like to follow guides but at the same time I don't know which one to use and I'm looking for something fun to play but also strong. Might also be slightly discouraged to play as much since druid/huntress are nearing and I've been dying to play druid since before EA even

The higher ones are just rare. If not SSF you can eventually buy them on currency market but they're not cheap. One of the atlas passives makes you more likely to find jeweler orbs in grassland maps
