Some builds might stack a stat but they have external reasons to do so like an ascendency passive for example

Its mostly to let him use most weapons more. Attack skills use the stats of your weapons to deal damage, and most melee weapons are physical base damage. So those attacks let him do funky elemental damage attacks and still deal damage based on your weapon

Ah yeah. The main reason it converts instead of just doing fire damage is because attack skills use the stats of your weapon, and most melee/ranged weapons have primarily flat physical damage on them. So to make the skill scale with your weapons they convert that phys.

Spells do damage coming from the gem itself, which tends to scale a lot with gem level.

does the game get harder after mid Act 2? I think I made a mistake of picking Ranger, because entire gameplay outside of boss arenas is just holding a lightning chain arrow button and almost never having to dodge or heal

For bosses it is a bit better but they still can't really do anything to you, you just hold one spell (poison arrow or lightning from above one in my case) and move around with a dodge every couple of seconds
