Fair. I dont think the gender should matter as long as they arent stupid mary sue annoying badly made characters.
As for having a choice. I think they should offer it aslong as it doesnt mean they have to remake every animation etc as it is a lot of work. If they mocap for movement etc its a really big expensive job to offer male and female especially with so many character. Its not just a skin swap its model, collision mesh, voice and animation

It will be similar skill tree. Even if you do fk up your char, just make a new one, it doesnt take long to lvl. Leveling in PoE is usualy just intro. Once you figure out how it works the fun starts.

If you can't clear because you're just dying then:

You should be just fine going straight into poe2. If you understand how attribute points and stat points work, you should be fine. I'm not sure how poe2 will handle skills, in poe its rather different than most games in that theyre items (gems) that you equip. The other poe diff is the lack of a normal money and using items with actual use as a currency instead.

In general they don't want a specific obvious choice ascendacy for summoner that's why they went this way.
But witch in general should have great support for minions
