You did nothing wrong so when you plant any thing with a stem like pumpkins or melons you have to wait that first initial timer for the stem to grow e.g. 10 hours for melon stem after that your melons will grow every 2 hours

So be careful not to accidentally trample your melon crops or you have to wait 10 hours for that one melon to grow
