Late game majority of players use a method called manual sell. It kills the mobs using a floor of cobblestone walls and lanterns on glass panes alternating like a checkerboard pattern. Then below that you use water to bring the items to a central point

Obviously this is only viable if you have hundreds of spawners and utilise a good method such as fencegate method for spawning

eventually you'll get the jungle island where it has spider spawners and as your progress you'll unlock more spawners and be able yo buy them too, whatever mobs you want to spawn you have to just play the game and complete quests

It takes time for crops to grow and like Alex said you get new mobs from spawners as they don't spawn naturally

For beetroot it takes less than a minute for cactus it's 15 minutes and carrots take 4 hours same with trees oak take 1 minute 30 seconds but acacia take nearly 2 days to grow
