The reason the pigmen could go so high was because you could bypass the tick delay in-between kills allowing for a much faster farm which wasn't capped by how fast you can damage mobs

That's the real reason why pigmen were so powerful

I literally had to run so many forceload commands just to make sure the entire thing stays loaded lol

What dose stem time mean cas my melon is fully grown right and when I harvest it it still says stem time remaining when the stem is fully grown

Well for melons, you have 2 different times, 1 is stem grown time, that grows once and stays grown, and the other is the melon grow time

Also make sure you have a dirt block for the melon to grow onto on the side for the melon growth time to advance
