The fastest way to gain apples is to mine multiple trees logs while all the other leaves decay rather than going around self mining

The more trees you get to start decaying the faster the drop speed becomes allowing it to overtake that time you need to mine leaves with fortune.

You repeat this until you have the required apples obviously

0.5% sounds low until you point out how many leaves per tree there is. Then you can do the math behind the chance% for an apple per tree
