I'm doing the exact same thing right now, set my base on the central chunk then gonna have 6 grinders in the surrounding chunks on the left and right at varied heights so they basically always going.
Only thing I'm having trouble planning is the Zombie Grinder which will be my main xp source, atm I have Four Level 18 Spawners but as they level up I'm gonna have to keep raising the spawn platform so they take enough damage but not so much they die from the fall damage...

I've heard Level 30 is the ideal, I suppose I could build the spawn platform that high them have kill platforms higher up the drop tube that will get built lower down the tube as they level up instead of changing the spawn platform...

Mobs have a roughly 5 level spawn variance btw so at level 30 spawner they'll spawn level 25-35 mobs (then if tough multiply by 1.5 times)

So for example say a Level 1 Zombie has 5 Hearts, does a Level 2 Zombie have 5.5 Hearts?

This is different. This is toggling what the farm does with the items when the player isn't there

Underneath the farm, icewater slings the gunpowder at an iron trapdoor. A lever toggles the position of the trapdoor. If the trapdoor is closed, the items will hit the trapdoor and fall directly downwards into lava. If the trapdoor is open, the items completely miss the trapdoor slinging the items a few blocks further which hit another ice water trail that brings them to the item elevator for the storage

So I use manual sell with the water. Then I have a system which send the items through a little toggle. I made a toggle which allows you to flip a switch and the switch would choose whether the items get deleted while your away or get sent to a backup storage
