Most likely the mob is quite close to the edge and since items don’t spawn in in the center its getting dropped/spawned in almost inside the walls. Adding more blocks wouldn’t help atp.

Depending on if you want hoppers to catch hoppers maybe get rid of the bottom layer of blocks (the layer on which the drops drop) so they can’t spawn in any blocks and make a 3x3 hopper platform to catch those

Pigs fall down and land on a plain of alternating iron bars and fences (so they don't connect) the pigs die on them and the drops fall through into water

Its semi afk so worst than chests in that method but much more efficient since you don't have to take the tike to break the chests

And you aren't hopper speed limited so you can build it in a tiny plain

If I were you, just stick to chests
