Always inferno, freeze won’t do much to giants in comparison. It also stacks, so if everyone on your team is using inferno/freeze sword, giants won’t get anywhere
This is also why you should more often than not avoid sending full waves of giants, as the other team can inferno 12x_ amount of giants all at once

after you splash him with a potion of weakness you right click him with a golden apple. If he eats the apple he'll start to shiver and after a while will turn into a villager, and will offer you much better trades
