You don't need to buy the starter collection, you can also buy just the game since the starter collection contains cosmetics/minecoins you don't really need to start playing.

How to Leave the Beta

Ye you need to extract it, im using 7zip so I cant help you with that but if you dont know what to do try watch some tutorials. Extracting Is pretty common so you wont have problems with that

If you done that then you can launch MCLauncher.exe and download version that you want. Only problem there is that you cant download betas - but I saw some solutions to this in Issues section on web from where you download this - just if you'll curious.
