You're saying that having character sheets open is causing your system to slow substantially? How much memory do you have? Which browser are you using?
Do all your players have the same issues?
I run 16Gb, at present, 1 Tb drive with two-thirds of it empty, and I've tried Firefox, Edge, and Chrome, with Chrome seeming to do the best for the game, right now.
My eldest Player has issues like this, as well, but worse, because his system is older and he's out in the country where he lives.
I have learned to minimize the numbers of things I have open and I go to pains to ensure I open only what I need, when I need it. Dice So Nice is turned off for rolling for NPCs, I use simple textures, and I have 27 mods loaded, but only use about 20 of them. I've gone to great lengths to cut down bandwidth and RAM use, and my games run functionally well, but you understand I have to take time to get things moving, sometimes.
Are you using walls/lighting in your scenes.
Yes.
The GPU is an older one and I know that's at least some of my problem, though I don't imagine the GPU needs to use a lot of 3D properties for Foundry VTT.
Windows 10, yes. My Cousin runs a computer store in Colorado and has told me Windows 11 is a PitA! I trust his knowledge.
(Eh, Windows 11 is probably the least substantial change MS has ever released. It's basically 10 with some rounded corners)
Yes, and they screw EVERYTHING up that never needed to be changed.
Anyway. Foundry has two key parts visually:

Canvas: this is where tokens and tiles render, and where walls and lighting happen.

Applications: The sidebar, character sheets, macro bar, scene selection. All rendered from HTML like any other web page.
Usually, a poor GPU only matters much for Canvas stuff. Too many walls, too many lights, too big a map.
Most applications don't have much if any GPU rendering.
Oh, and I have very nearly EVERYTHING I can put into Compendiums, in Compendiums.
I try to keep my maps small, as I learned to do in Roll 20.
I don't have too many lights or walls on my maps... again, a function of learning from Roll 20.
Have you tried running Foundry with the canvas disabled? Just to see how it performs?
I'll admit to being sort of scared to do that. Does it just turn off the fabric background?
Oh, and I don't use the overhead layer.
Oh, no, I can't do that. I need the map, I need the tokens. I don't run TotM very often.
I don't think I need to get THAT drastic.
It's a single setting.
Things run well enough, as long as I do the GM thing and keep seeking the information I need.

I wonder if you have some browser/OS settings that need fixed. Have you tried the Electron app?
I think there's a troubleshooting guide around this server somewhere.
I've never even heard of it.
I know there are a few setting that, if not set right, will make Foundry run horribly.
When you GM, you use Chrome?
Oh, are you using Foundry hosted?
Yes. Foundry isn't friendly to Firefox and I don't like Edge. Never have like Internet Explorer.
Actually, yes, I have to host on The Forge.

You might want to try some of the troubleshooting guides, or ask for some help in #troubleshooting (disable all modules before asking for help)
Your performance issue might be something fixable. You have plenty of RAM even for Chrome's greed.

And if you're being conservative with your lighting, it's hard to believe that your GPU is the problem..
Needing to close sheets to make the game run faster... Should not be nessesary.

Okay, game report... I queried my friends who showed for the game tonight, of which we were down two, and asked them what they thought about the cards, the best way to enhance them, and my eldest Player, Andrew, said it would be nice if they were easier to access and shut off when we need to.
Ginger basically told me whatever I decided to do she would go with it. Robert and Connor said they like the system we have, already.
I did explain the perks of the system and did not prompt any of them to give a specific answer.
The game went swimmingly, this evening, if a bit laggy toward the beginning and much laughter was had by all. I think that's the best any GM can ask for, no?
