I'm telling you what discord tells me. They don't often look at deleted messages. Those aren't plug-ins. Those are alternative clients that are against ToS unless you are talking bots, but those work differently anyways.

If you gave it to someone then that server officially belongs to them and you can't reclaim it. However, if you are a mod on it, it has 100+ members and the owner has been offline for 30 days, you can submit a ticket to support requesting ownership of it.

The owner doesn't need any roles so could be any one of them, look for the crown icon (provided there is no hoisted admin role on the server)

You could manually verify each new user with an ID check (which is not recommended, as it scares people away and as you need trustworthy staff and an actual privacy and data retention policy) but this often just isnt worth the time
