The server needs community mode and onboarding enabled. The server guide should be in the onboarding options.
If you meant that as an user, you can't see the server guide when it's enabled, you can mention the channels in the server guide and click the mentions to see the channels like normal channels.

I was using the same settings last Friday and they were working fine with me being able to hear the audio and talk and all but now its just no sound playing to my headset at all.

hit the windows key, type device manager, navigate to bluetooth and click the > arrow. make sure your device is completely removed by right clicking it and uninstalling the device.

then go back to windows bluetooth settings and have windows detect the device again

If you've created the ticket with Discord's support website, at the bottom of the list of articles, there is a button like "No, I still need help", you might need to press it for the ticket to really be sent.
Also, if you got a response and it wasn't sent by "Clyde", it probably was a pre-created response chosen by an human.

I don't think there's a way to search by conversation. You'd have to know their tag.
