That has been replaced by the "forms" feature available on Disford bots, the feature you're looking for can work for one person at a time but not more than that, unless you program a bot to use the forms feature or use DMs, which means you can access the messages without the bot relaying it to you. Hope that helps!

a question I have that has some moral implications and related to discords guidelines:

one of my applications is for a small gaming community and one of its functions is alert staff if someone in-game says something we deem hateful. we run all comments in-game through googles comment analyzer API which then gives us a score etc and the result, including the comment, gets posted in an age gated and staff only channel in the discord server. this allows staff to punish and handle them even if nobody is online to handle it when it happens. but it means we have messages of a hateful nature (racism etc) being posted by our bot in to this channel for moderation purposes. do I need to worry about getting in to trouble for this?

Yeah, deleting channels and sending messages are core pieces of Discord functionality. Be careful what permissions you give bots. Most probably shouldn't be given the permissions to delete channels, for instance.

It's not actually an issue, Discord flips your view of yourself for just you, but not for anyone else. They just don't like that it does that, but there's nothing really to fix, just is what it is.

I'm seeing that selling a discord server is against TOS as a server is their intellectual property; however, the code you write is your intellectual property so I don't think there would be an issue selling it. I don't know where discord stands when it comes to selling the bot token and access to the bot page.

Timezone on what? And for most of the US eastern timezone, EDT is correct currently. If you're in an area that doesn't observe DST, you might need to pick a location-based timezone that aligns with that non-observence.
