I have cleaned, prepped and leveled the bed beforehand, and my bed is not badly warped(I think) for the mesh to be unable to compensate

Model: SV06 with Klipper
Mods: Oldham Couplers, 5015 fans for parts and hotend, spider couplers for leadscrews
Filament: Anycubic PLA Matte printed at 215C on a 65C bed
Sliced on Prusaslicer

EDIT: The stringiness seems to align with the areas with dips, could it be that the mesh is not being applied?

It sounds like you've done the necessary steps to prepare your bed for 3D printing. If your mesh bed leveling is still unable to compensate, you may want to check your nozzle height or double-check your leveling calibration. Also, make sure your firmware and slicer settings are properly configured for mesh bed leveling. If the issue persists, you may want to consider manual leveling or contacting the manufacturer for further assistance.
