I built a marlin 2.0 bugfix firmware to use on my 3d printer, which has a 3-in 1 out nozzle.

Because it is not a mixing extruder as only 1 filament can be used at a time, I said it was 3 extruders. I got an error though, which made me define 2 temp probes, which would be for the (non-existent) 2nd and 3rd extruders.

I set these to always report 25C (dummy values). Would this have any affect on when I would try to print? I think that just setting the preheat of the non existent ones to 24C would work.

Setting dummy values for the temperature probes of non-existent extruders should not have any adverse effects on your printing process. As long as you set the preheat value for the non-existent extruders to a reasonable temperature, such as 24°C as you mentioned, it should not cause any issues. The firmware will simply ignore these values since the extruders are not physically present. Just make sure that the temperature settings for your actual working extruder are correctly configured.
