Can I use the Optimum and Dye-sub PBT keycap sets with the new 60 HE v2?

I know optimum doesn’t have keys for split spacebar. Not sure about dye sub pbt. If you have the normal spacebar option, that’s not an issue and both work fine.

The dye-sub screenshot you selected is from the JIS version, just keep in mind, that the 60HE (v2 or not) is not JIS layout

Or ISO, but depending if you‘re from the US that might not be offered there I think
